Christmas 2019

Three days since Christmas Day and this is the first chance I have had to add to my blog, mainly because our Christmas is still going strong. We started preparing for the day three days before, mainly setting up but also prepping the food as a few items we wanted to prepare beforehand to save time on Christmas morning. The last couple of years I have made bakes for the vegetables which I had par cooked and then finished them off in the morning and it has worked well so we did the same thing this year. Robb always does the potatoes because he has a knack for them and this year he cooked them in duck fat and they were so good that this will now become tradition. I made a cheesy broccoli and cauliflower bake, hasselback butternut pumpkin, a garlicky beans with bacon and a beetroot and onion bake, I cooked these in the oven and Robb cooked the potatoes in the baby Weber. For meat we had cold ham and chicken and hot beef, pork and lamb, the beef and pork were cooked on the spit and the lamb was cooked in the medium Weber. Robb had cooked a plum pudding and made up a trifle for dessert and of course the Christmas cake he had made was on hand in case we were still hungry. For lunch we had our son, his wife and three children, our daughter and two boys and our daughter-in-laws parents, just a nice size group and I feel the day went really well and thankfully we made a good dent in the food with just enough meat left for a salad at dinner time and lunch the next day. Our son and family bought a new van for Christmas so they have towed that up here and set up for a few days and this is why our Christmas is still going strong. On boxing day our eldest son and his family came for lunch, I love it when our children get together at our place they get on well and there are always plenty of laughs. Robb and I have had the house to ourselves today while Matt, Lyndal and children have gone to visit Lyndal's parents who only live 30 minutes away as John and Karen have extended family visiting and after, I think they intend to visit the beach on the way home as it is an excellent beach day, Robb and I have taken advantage of the break and are relaxing with our feet up watching Netflix and of course I am catching up on my blog.
